Wild Mix Soup
Ingredients
For 4 portions:
1 cup dried wild mushroom mix (e.g., porcini, chanterelle, or wild mix)
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 carrot, diced
2 celery stalks, diced
4 cups vegetable or chicken stock
1 bay leaf
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
Salt and pepper to taste
Method
Soak the dried mushrooms in 2 cups of warm water for 20 minutes. Once rehydrated, chop the mushrooms and be sure to reserve the soaking liquid for added flavor.
In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, carrot, and celery. Sauté until the vegetables are softened and fragrant.
Stir in the chopped mushrooms, thyme, and bay leaf. Let them cook together for 2-3 minutes, allowing the flavors to meld.
Pour in the reserved mushroom soaking liquid and the stock. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 30 minutes.
Season the soup with salt and pepper to taste. Serve it hot, accompanied by a slice of crusty bread for a complete meal.
